Israeli start-up MAMAY Technologies has introduced an algorithm capable of objectively assessing the sweetness of food and beverage items.
The process begins with ‘digitising’ sweetness – this involves conducting a series of physical and chemical tests on products in the lab. By analysing the molecules in these items and understanding their combined impact on taste and smell, MAMAY can create what it describes as an ‘objective sweetness profile’.
Its recently launched software as a service (SaaS) platform functions as an ‘objective simulator of product taste, odour, and texture’, offering the capability to quantify sweetness effects using over 70 eligible sweeteners present in food and beverages.
The start-up has formed partnerships with businesses analysing water, coffee, milk and tea products. These collaborators can use the platform to evaluate their own products and those of competitors. MAMAY is also looking to extend beyond sweetness, with plans to offer services related to saltiness, bitterness, sourness, and spiciness in the coming months.
