Food tech company Pairwise has introduced its first gene-edited greens under the brand name Conscious Greens. The product marks a significant milestone as the first food product in the United States to be developed using CRISPR technology.
The Conscious Greens Purple Power Baby Greens Blend is a combination of purple and green mustard greens. Pairwise says it has successfully eliminated the natural bitterness of the greens, resulting in a taste that resembles lettuce. The product is co-branded with Performance Food Group’s Peak Fresh Produce offering and is currently available in select restaurants and outlets within the PFG network.
While gene-edited commodity crops have become increasingly prevalent in the US, the majority of genetic modifications have previously focused on enhancing yields or increasing resistance to pests. The difference here is that Pairwise is using CRISPR technology to create fruits and vegetables that are healthier and also more appealing to consumers.
Using gene editing techniques, Pairwise aims to enhance the quality and desirability of agricultural produce. This approach represents a departure from traditional genetic modifications and offers potential benefits in terms of taste, nutrition and overall consumer satisfaction.
