Mellody is bee-free honey that’s molecularly identical to the real thing

Developed by California-based food tech start-up MeliBio, Mellody is a bee-free vegan honey product that’s apparently almost indistinguishable from the real thing.

Its creation was prompted by the environmental impact of commercial honey production, which disrupts biodiversity and harms native bee populations. Mellody’s mission revolves around reducing pressure on pollinators, using technology instead of bees to make honey.

According to CEO and co-founder Darko Mandich, a former honey industry veteran in Europe, Mellody almost completely matches real honey on a molecular level, thanks to the company’s proprietary fermentation process, ‘marrying nature and science to mimic what bees are doing in nature and create animal-free products that match bee-made ones’.

The product made its retail debut at home store Eleven Madison in New York in April 2023.
