In partnership with Toridoll Holdings, Fujitsu’s artificial intelligence-powered demand forecasting service is rolling out at over 800 Marugame Udon noodle shops across Japan.
The technology will allow each individual restaurant to accurately predict customer numbers and sales ahead of time, using weather data and POS data. The process also helps to optimise complex manual processes around order quantities and food planning. This helps to deliver better efficiency overall by reducing food waste and improved energy efficiency by managing staff allocation and in-store air conditioning.
Using a combination of the restaurant’s POS data, business calendar and promotional schedule, combined with weather data, the system is able to accurately predict daily customer visits, forecast sales numbers, and optimise food planning and quantities and energy efficiency.
Rather than making AI the focus of customer-facing processes, restaurants and other food outlets should be looking to capitalise on its ability to use existing data to optimise processes and reduce waste.
