San Francisco-based Endless West distillery has created a new type of whiskey, which is aged in less than 24 hours. The distillation process uses molecules taken from acids in citrus and sugars found in corn and cane – all ingredients selected to enhance the whiskey’s aroma – to speed up the lengthy traditional process of ageing in oak barrels. Endless West call their method ‘note-by-note production’ and use lab-like settings to map the chemical profile of the whiskey.
All the chemicals used in the production of Glyph are from natural sources. Due to US Federal guidelines defining whiskey production, Glyph isn’t legally allowed to claim itself as whiskey. The brand has named it a ‘spirit whiskey with natural flavours’.
Alec Lee, co-founder of Endless West, said: “They do the same thing, they’re made of the same components – but the process is different.”
The whiskey is blended in small batches, then hand-bottled once ready. The bottle features phrases such as “provocative spirits for curious minds” and “tradition is born from rebellion.”
The bottle label design features a molecular map in gold foil of the natural ingredients used to make the product. The bottleneck is covered in tiny gold specs, mimicking a scattering of molecules.
Glyph retails at $40 per bottle.
