Cheese giant Bel Group and Climax Foods have joined together to create an AI-formulated, plant-based cheese.
Bel Groups hopes to make a cheese substitute across all its brands that is plant-based but identical in flavour, texture and nutritional value to its dairy-based counterpart. The new, innovative dairy-free cheeses would also be significantly lower in carbon emissions by removing the need for farms dedicated to making dairy products.
Climax Foods uses AI and predictive analysis to take a closer look at the molecular structure of traditional animal cheese. Then, using ‘Deep Plant Intelligence’, the structure is recreated without the use of dairy. Climax Food’s process found previously hidden sources of protein and lipids that perfectly mimic real cheese in a way that hasn’t been done before. Although the full ingredients list has yet to be made public, Climax Foods says all contents are generally recognised as safe.
CEO of the Bel Group, Cécile Béliot, says the plant-based developments ‘can meet the three-fold challenge of sustainable, nutritious, and accessible’ and can make a huge difference in the dairy industry.
The groups combined forces in 2023, and are looking to introduce the new offerings in the US and Europe before the end of 2024.
