Launched in Finland in April 2024, AI-Conic claims to be the world’s first coffee blend crafted with the help of artificial intelligence.
The innovation came as the result of a collaboration between Helsinki-based Kaffa Roastery and Elev Consulting, a Finnish company specialising in AI applications. Kaffa provided expertise on coffee and data about its top-selling blends which Elev fed into a large language model, combining machine learning techniques with traditional methods in the art of coffee blending.
The AI model was used to analyse the data and suggest an exciting new blend, which ended up comprising four beans from Brazil, Guatemala, Colombia and Ethiopia. The result was surprising and “somewhat weird”, according to Kaffa’s founder Svante Hampf, as blends usually only contain two or three beans, to allow tasting distinction between the different flavours and origins. However, after roasting and blind tasting, Kaffa decided the blend was perfect as is, with no need for human adjustments.
